- Prepare the watermelon by cutting it into chunks. Remove any seeds if using seeded watermelon. For the best texture, use cold watermelon straight from the refrigerator.
- Combine the watermelon chunks, lime juice, honey or maple syrup, and salt in your blender. Blend until completely smooth and frothy.
- Taste the mixture and adjust sweetness if needed. Remember that freezing dulls sweetness slightly, so it should taste a bit sweeter than you'd like the final sorbet to be.
- Pour the mixture into a freezer-safe container. Cover with plastic wrap or a lid and freeze for at least 4 hours, or until firm.
- For serving, let the sorbet sit at room temperature for 5-10 minutes to soften slightly. Scoop into bowls and garnish with fresh mint if desired.
Notes
Choose ripe watermelon that feels heavy for its size and has a creamy yellow spot. The mixture should be slightly sweeter than desired final product since freezing reduces perceived sweetness. For extra smooth texture, strain through fine-mesh sieve before freezing.
