- In a bowl, combine the diced tomatoes, chopped basil, minced garlic, extra virgin olive oil, and balsamic vinegar. Season with salt and freshly ground black pepper to taste. Stir gently to mix all the ingredients together. Let the mixture sit for about 10 minutes to allow the flavors to meld.
- Preheat your oven to 375°F (190°C). Slice the baguette or rustic bread into 1/2-inch thick slices. Brush each slice lightly with olive oil. Place the slices on a baking sheet and toast in the oven for about 5-7 minutes, or until they are golden and crispy. Alternatively, you can grill the bread slices for a smoky flavor.
- Once the bread slices are toasted, rub the top of each slice with a garlic clove for an extra burst of flavor. Spoon the tomato mixture generously onto each slice of toasted bread. Drizzle a little extra olive oil on top if desired.
- Bruschetta is best served fresh, so enjoy it right away while the bread is still crispy and the tomato mixture is vibrant and flavorful.
