  • 4 medium zucchinis, thinly sliced
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

  1. Preheat the oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
  2. Thinly slice the zucchinis and place them in a large bowl. Sprinkle with salt and let them sit for 10 minutes to draw out excess moisture. Pat dry with a paper towel.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and set aside.
  4. In the prepared baking dish, layer half of the zucchini slices. Top with half of the sautéed spinach, feta cheese, mozzarella, and Parmesan. Sprinkle with oregano, basil, salt, and pepper. Repeat the layers with the remaining ingredients.
  5. If using breadcrumbs, sprinkle them evenly over the top of the casserole. Drizzle with the remaining olive oil.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the zucchini is tender.
  7. Let the casserole cool for a few minutes before serving. Enjoy as a main dish or a side!

Notes

Use fresh zucchini and spinach for the best flavor and texture. Customize the cheese or add cooked chicken for a heartier dish. Can be assembled ahead of time and refrigerated until ready to bake.
