- Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy. Drain thoroughly and set aside.
- Heat olive oil in a large saucepan over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the drained rice to the saucepan and stir constantly for 2-3 minutes until the rice becomes slightly translucent around the edges. This toasting step is crucial for achieving that perfect fluffy texture.
- Pour in the vegetable broth, lemon juice, and add the lemon zest, oregano, salt, and pepper. Bring the mixture to a boil, then immediately reduce heat to low, cover, and simmer for 18-20 minutes.
- Remove from heat and let the rice stand covered for 10 minutes. This allows the grains to finish cooking evenly. Fluff with a fork, then stir in the fresh parsley and dill.
Notes
Use long-grain rice like basmati or jasmine for best fluffy results. Don't lift the lid while cooking to prevent steam loss. Always use fresh lemon juice rather than bottled for brightest flavor. The rice reheats beautifully and can be made up to a day in advance.
