  1. Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy. Drain thoroughly and set aside.
  2. Heat olive oil in a large saucepan over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the drained rice to the saucepan and stir constantly for 2-3 minutes until the rice becomes slightly translucent around the edges. This toasting step is crucial for achieving that perfect fluffy texture.
  4. Pour in the vegetable broth, lemon juice, and add the lemon zest, oregano, salt, and pepper. Bring the mixture to a boil, then immediately reduce heat to low, cover, and simmer for 18-20 minutes.
