Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- Pat the chicken thighs dry with paper towels. In a small bowl, mix together the olive oil, garlic powder, smoked paprika, black pepper, and salt. Rub this mixture evenly over both sides of the chicken thighs.
- Arrange the chicken thighs skin-side up on the prepared baking sheet, making sure they're not touching.
- Bake for 20 minutes. Meanwhile, whisk together the barbecue sauce, brown sugar, and apple cider vinegar in a small bowl.
- After 20 minutes, remove the chicken from the oven and brush generously with the barbecue sauce mixture. Return to the oven and bake for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C) and the sauce is caramelized and sticky.
- Let the chicken rest for 5 minutes before serving.
Notes
Patting the chicken dry is crucial for achieving crispy, caramelized exterior. Apply barbecue sauce during last 10-15 minutes of cooking to prevent burning. Use a meat thermometer to ensure chicken reaches 165°F for safety and juiciness.
