  • 8 slices of fresh white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp unsalted butter, softened (optional, for spreading on bread)

  1. In a mixing bowl, combine the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Mix until smooth and well combined. Taste and adjust seasoning if needed.
  2. If using, lightly butter each slice of bread. This step is optional but adds a nice richness to the sandwich. Trim the crusts off the bread for a more traditional tea sandwich look.
  3. Spread a generous layer of the herb cream cheese mixture onto one side of each slice of bread. Place the thinly sliced cucumbers evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread, cream cheese side down.
  4. Cut each sandwich into quarters or halves, depending on your preference. Arrange them on a serving platter and garnish with additional fresh dill or chives if desired. Serve immediately or cover with a damp cloth to keep fresh until serving.

Notes

Choose English cucumbers for fewer seeds and milder flavor. Assemble sandwiches just before serving to prevent sogginess. For extra flavor, add hummus or avocado spread along with the cream cheese.
