  1. In a bowl, combine the diced tomatoes, chopped basil, minced garlic, extra virgin olive oil, balsamic vinegar, salt, and pepper. Mix well and let it sit for 10 minutes to allow the flavors to meld.
  2. Preheat your oven to 375°F (190°C). Brush the baguette slices with olive oil and place them on a baking sheet. Toast in the oven for 5-7 minutes or until golden and crispy. Alternatively, you can toast them in a skillet over medium heat until golden brown.
  3. Once the bread is toasted, rub each slice with a garlic clove for extra flavor. Spoon the tomato mixture generously onto each slice of toasted bread.
  4. Serve the bruschetta immediately while the bread is still crispy. Garnish with additional fresh basil if desired.

Notes

Choose ripe tomatoes for the best flavor. Toast the bread until crispy to prevent sogginess. For variations, add diced mozzarella or a drizzle of pesto. Prepare the tomato mixture ahead of time and store it in the refrigerator. Toast the bread just before serving to maintain crispiness.
