  • 4 salmon fillets (6 oz each), skin on
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh basil, chopped

  1. Season and sear the salmon. Pat the salmon fillets dry with paper towels and season with Italian seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side up and cook for 4-5 minutes until golden brown. Flip and cook for another 2 minutes. Remove salmon from skillet and set aside.
  2. Create the creamy sauce. In the same skillet, reduce heat to medium. Add garlic and sun-dried tomatoes, sauté for 1 minute until fragrant. Pour in heavy cream and bring to a gentle simmer.
  3. Add spinach and cheese. Stir in fresh spinach until it wilts, about 2 minutes. Add Parmesan cheese and stir until the sauce thickens slightly.
  4. Return salmon to skillet. Place the seared salmon fillets back into the creamy sauce. Spoon some sauce over the top of each fillet. Simmer for 3-4 minutes until salmon is cooked through.
  5. Garnish and serve. Sprinkle with fresh basil and additional Parmesan cheese if desired. Serve immediately with your favorite sides.

Notes

Use thicker salmon fillets at room temperature for even cooking. Don't overcrowd skillet - cook in batches if needed. Use fresh garlic instead of powdered for best flavor. Simmer gently rather than boil rapidly for restaurant-style sauce.
