- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.
- Prepare the coating station by creating three separate bowls. In the first bowl, mix panko breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, paprika, and black pepper.
- In the second bowl, whisk the eggs until smooth.
- If chicken breasts are thick, place them between plastic wrap and gently pound to 1/2-inch thickness for even cooking.
- Working one piece at a time, dip each chicken breast first in the egg mixture, then coat thoroughly with the breadcrumb mixture, pressing gently to adhere.
- Place coated chicken on the prepared baking sheet and drizzle or spray with olive oil to help achieve golden-brown color.
- Bake for 20-25 minutes, or until chicken reaches an internal temperature of 165°F and the coating is golden and crispy.
- Let rest for 5 minutes before serving with fresh parsley and lemon wedges.
Notes
Press breadcrumb mixture firmly onto chicken for even coating. Pound chicken to uniform thickness for even cooking. Bake on wire rack over baking sheet for extra crispiness. Let chicken rest after baking for more tender meat.
