- Prepare the chicken breasts by pounding them to an even 1/2-inch thickness
- Set up breading station with three shallow bowls: flour in first, beaten eggs in second, and Parmesan mixture in third
- Dredge each chicken breast first in flour, then egg, then Parmesan mixture, pressing gently to adhere coating
- Heat olive oil in large skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden brown and crispy
- In same skillet, melt butter and sauté minced garlic for 30 seconds until fragrant. Add chicken broth and scrape up browned bits
- Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 3-4 minutes until sauce thickens slightly
- Return chicken to skillet and spoon sauce over each piece. Garnish with fresh parsley and serve immediately
Notes
Use freshly grated Parmesan for best flavor and texture. Don't overcrowd pan - cook in batches if necessary. Let chicken rest 5 minutes before slicing.
