- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface. Transfer it to the prepared baking sheet and prick the base all over with a fork to prevent it from puffing up too much during baking.
- Arrange the thinly sliced tomatoes on the pastry, leaving a small border around the edges. Drizzle with olive oil and sprinkle with dried thyme, oregano, salt, and pepper. Top with shredded mozzarella and grated Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the cheese is bubbly and lightly browned.
- Remove the tart from the oven and let it cool slightly. Drizzle with balsamic glaze if desired, and garnish with fresh basil leaves. Slice and serve warm.
Notes
Choose ripe tomatoes for the best flavor. Pat the tomato slices dry with a paper towel before arranging them on the pastry to prevent a soggy crust. For a deeper flavor, caramelize some onions and spread them over the pastry before adding the tomatoes. You can prepare the tart ahead of time and reheat it in the oven before serving.
