  1. Prepare the vegetables and fruit. Wash and dry the strawberries, then remove the stems and slice them into quarters. Wash the cucumber and slice it thinly. If using a regular cucumber, you may want to peel it first.
  2. Combine the base ingredients. In a large mixing bowl, gently toss together the sliced strawberries, cucumber, and crumbled feta cheese. Be careful not to mash the strawberries.
  3. Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until well combined. The honey helps balance the acidity of the lemon juice.
  4. Dress the salad. Pour the dressing over the strawberry and cucumber mixture and toss gently to coat all ingredients evenly.
  5. Add finishing touches. Sprinkle the chopped mint leaves and toasted almonds (if using) over the top. Serve immediately for the freshest flavor.

Notes

For best results, use ripe but firm strawberries that hold their shape when sliced. English cucumbers work particularly well because they have fewer seeds and thinner skin. If making ahead, keep dressing separate and toss just before serving to prevent sogginess.
