Ingredients

Ingredients
  • 4 ripe peaches, sliced
  • 8 oz burrata cheese
  • 2 cups mixed greens (arugula, spinach, or butter lettuce)
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and freshly ground black pepper to taste
  • 1/4 cup toasted pine nuts or slivered almonds (optional)

Method

Instructions
  1. Wash and slice the peaches into thin wedges. If the peaches are not very sweet, toss them with a little honey to enhance their natural sweetness.
  2. In a large bowl, combine the mixed greens, peach slices, fresh basil, and mint leaves. Toss gently to mix.
  3. Tear the burrata cheese into small pieces and place them on top of the salad. Handle gently to maintain its texture.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper. Drizzle this dressing over the salad just before serving.
  5. Sprinkle the toasted pine nuts or almonds on top for added crunch. Serve immediately to enjoy the freshness of the ingredients.

Notes

Choose ripe, fragrant peaches for the best flavor. Burrata is best served at room temperature, so take it out of the fridge 30 minutes before assembling. Customize the greens to your preference, and assemble the salad just before serving to keep it fresh.
