  • 4 ripe peaches, halved and pitted
  • 4 cups arugula
  • 1 ball burrata cheese
  • 1/4 cup fresh basil leaves
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

  1. Preheat your grill or grill pan to medium-high heat. Brush the peach halves with olive oil and place them cut-side down on the grill. Cook for 3-4 minutes until char marks appear and the peaches soften slightly. Remove from the grill and set aside.
  2. In a small saucepan, combine the balsamic vinegar and honey. Simmer over low heat for 5-7 minutes until the mixture thickens slightly. Remove from heat and let it cool.
  3. In a large bowl, toss the arugula with a drizzle of olive oil, salt, and pepper. Arrange the grilled peach halves on top of the arugula. Tear the burrata cheese into pieces and scatter it over the salad. Drizzle the balsamic glaze over the top and garnish with fresh basil leaves.

Notes

Choose ripe but firm peaches for grilling. For added crunch, sprinkle toasted nuts like almonds or walnuts over the salad. If you don't have a grill, use a grill pan or broil the peaches in the oven for a similar effect.
