Ingredients

Ingredients
  • 1 pound fresh carrots, peeled and cut into 2-inch pieces
  • 1 pound fresh green beans, trimmed
  • 3 tablespoons butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • Optional: 1 tablespoon chopped fresh parsley for garnish

Method

Instructions
  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a small bowl, whisk together the melted butter, honey, minced garlic, thyme, salt, and pepper until well combined.
  3. Place the prepared carrots and green beans in a large mixing bowl. Drizzle with the olive oil and toss to coat evenly.
  4. Pour the honey butter mixture over the vegetables and toss thoroughly until all pieces are well coated.
  5. Spread the vegetables in a single layer on the prepared baking sheet, making sure they're not overcrowded to ensure even roasting.
  6. Roast for 20-25 minutes, stirring halfway through, until the carrots are tender and both vegetables have developed golden brown edges.
  7. Remove from oven and transfer to a serving dish. Garnish with fresh parsley if desired, and serve immediately while warm.

Notes

Cut vegetables evenly for consistent cooking. Don't overcrowd the pan for proper caramelization. Adjust sweetness by reducing honey if preferred. Can prepare vegetables and glaze mixture separately up to 4 hours in advance.
