- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
- In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Toss gently to coat the peaches evenly. Pour the peach mixture into the prepared baking dish.
- In a separate bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt. Stir in the milk and melted butter until just combined. The batter will be thick.
- Drop spoonfuls of the batter over the peaches, spreading it gently to cover as much of the fruit as possible.
- Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the peaches are bubbling around the edges.
- Let the cobbler cool for a few minutes before serving. Enjoy it warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.
Notes
Use ripe but firm peaches for the best texture. For a little extra warmth, add a pinch of ginger or cardamom to the peach mixture. You can assemble the cobbler ahead of time and refrigerate it until ready to bake. Store leftovers in the refrigerator for up to 3 days.
