Ingredients

Ingredients
  • 1 pound fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1 tablespoon fresh lemon juice

Method

Instructions
  1. Preheat your oven to 425°F (220°C). Wash the green beans thoroughly and pat them dry with paper towels. Trim the ends off the beans - you can do this quickly by lining up a handful and cutting off the stem ends all at once.
  2. In a large bowl, toss the green beans with olive oil, making sure they're evenly coated. Add the minced garlic, salt, pepper, and paprika if using. Toss everything together until the beans are well coated with the seasoning mixture.
  3. Spread the seasoned green beans in a single layer on a large baking sheet. Make sure they're not overcrowded - this is key for getting them crispy rather than steamed. If your baking sheet is small, use two sheets or roast in batches.
  4. Roast the green beans for 15-20 minutes, or until they start to develop golden brown spots and crispy edges. About halfway through, give the pan a shake or use tongs to flip the beans for even cooking.
  5. Sprinkle the grated Parmesan cheese evenly over the hot green beans and return to the oven for 2-3 minutes, just until the cheese melts. Drizzle with fresh lemon juice before serving for a bright, fresh flavor.

Notes

Dry beans are key for crispiness - make sure green beans are completely dry before tossing with oil. Don't crowd the pan to prevent steaming. Add Parmesan cheese during the last few minutes of roasting to prevent burning while allowing it to melt properly.
