- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the butter and sugars together in a large mixing bowl until light and fluffy.
- Add the eggs and vanilla, mixing until fully combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
- Stir in the oats and raisins or chocolate chips (if using) until evenly distributed.
- Scoop the dough into 2-tablespoon-sized balls and place them on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers look slightly underbaked.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Use room temperature butter for easier mixing and a smoother dough. Don’t overbake the cookies; pull them out of the oven when the edges are set but the centers are still soft. Chill the dough for 30 minutes before baking if you prefer thicker cookies. Customize your cookies by adding nuts, dried cranberries, or white chocolate chips for a unique twist.
