- In a large mixing bowl, combine the ground turkey, grated onion, minced garlic, egg, breadcrumbs, Worcestershire sauce, Dijon mustard, smoked paprika, black pepper, and salt. Mix gently with your hands until just combined – avoid overmixing to keep the burgers tender.
- Divide the mixture into 4 equal portions and shape into patties about 3/4-inch thick. Use your thumb to make a slight indentation in the center of each patty – this prevents the burgers from puffing up during cooking.
- Heat olive oil in a large skillet over medium heat. Cook the patties for 5-6 minutes per side, or until they reach an internal temperature of 165°F. For grilling, preheat grill to medium-high and cook for the same time, flipping once.
- Let the burgers rest for 3-4 minutes before serving to allow juices to redistribute. Serve on whole wheat buns with your favorite toppings like lettuce, tomato, and avocado.
Notes
Don't overmix the meat mixture, keep ingredients cold, chill patties before cooking, and use 93% lean ground turkey for best results. The thumb indentation prevents puffing during cooking.
